Which one among bank of India, Axis Bank and State bank of India is better for a long term investment ?

Well, do not go for Axis bank though it is a good stock but it is always not wise to enter a stock when it is around its all time highs thought its high was something 1200 but still it is on highs.  Banking stocks are usually good in long term and you can assume them as safe investments. If there is any new dip in the market then you can add them if you are long term investor. I would go for SBI because its my one of favourite stock from long time.
